At Stony Brook University, the dining experience is designed to foster community and connection. SBU Eats has launched a program called "Together at the Table," aimed at celebrating the bonds between students and dining staff. This initiative encourages students to share stories about how staff members have positively impacted their lives.
Ken Ferro, director of operations, explained that the program began as a way to gather student feedback on hospitality experiences. “The stories that we have been receiving are the moments that matter because they show us that SBU Eats isn’t just here to serve meals, they’re here to support students.” Throughout the year, various events will allow students to engage with and shape the dining program.
Ferro emphasized the importance of listening to student needs. “We want students to know they have a voice in their dining experience,” he shared. Recently, SBU Eats added "Uproot Milk" dispensers at East and West Side dine-in locations, offering alternatives like oat milk and soy milk for those with dietary restrictions.
Weekly menu updates include ten new items accessible via the Nutrislice app or venue screens. Options range from honey sesame Brussels sprouts to tofu schnitzel with mushroom sauce.
Ferro also organizes an annual Thanksgiving Feast for students remaining on campus during the holiday. The event features traditional dishes along with vegan and vegetarian options, creating a welcoming atmosphere reminiscent of home. “We want to create a space where students can come together, enjoy a comforting meal, and experience the spirit of the holiday in the company of their SBU Eats family,” stated Ferro.
SBU Eats aims not only to provide food but also to offer support and joy through its hospitality program.
